Cooking Whole Grains
Q. Dear RD Lory,
I appreciate all that you have done for me, and I am trying to make the necessary changes to improve my lifestyle, but the hardest part is trying to incorporate whole grains into my diet. I can buy the whole grain breads and cereals, but how do I cook whole grains like barley or couscous or quinoa? When I cook them I end up with a starchy mess. Please help,

A. Dear Darla,
I understand your frustration. Each grain has a unique simmer time and amount of broth or water to add. With white rice, the ratio is 1cup rice to 2 cups fluid, but for brown rice it is 2 ½ cups fluid to 1 cup rice.
